Hi, I'm in the middle of restoring a 71 GP 125 and was wondering if anyone can point me in the direction
of a good quality original looking headlight unit and rim. Most of the ones I've looked at have rims made
of tin foil and plastic lens

If you're not in too much of a hurry Scootopia have been developing excellent replica GP CEV headlight and rear light units which should be available very soon. They are also producing all the plastic grills too. Check out their Facebook pages for all their latest in house GP related products. I'm also collecting parts for my late '71 DL200 and I'm in the same position as you are by the sound of it !
